I followed a small hog operation from upstate New York, Stony Brook Farm raises heritage hogs, which are locally slaughtered and then sold to Manhattan’s Chelsea Market.
The local production helps to avoid excessive carbon emissions, expected in today’s food production. Due to the relative smallness of Bob Comis’ farm he is able to keep a relationship to his animals and ensure their health.
